John 19: 29-30
"Now a vessel full of sour wine was sitting there; and they filled a sponge with sour wine, put it on hyssop, and put it to His mouth. So when Jesus had received the sour wine, He said, “It is finished!” And bowing His head, He gave up His spirit."
It is Finished
After Jesus made the statement, "I thirst", they then dipped hyssop into sour wine and brought it to His mouth. It is after this act that He declares the work of the cross to be finished. Hyssop was what was used during the Passover to sprinkle the blood of the lamb onto the doorposts of the home. His work as our Passover Lamb, the Lamb of God Who takes away the sins of the world, was completed.
Jesus celebrated the Last Supper with His disciples prior to His arrest. That supper was in fact a Passover Seder. The bread He broke was matzah. He said "This is my body." The reason He said this is because, if you look at a piece of matzah you will see it is bruised, it is pierced and it is striped.
A piece of the matzah is hidden away before the Seder begins to be recovered later by the children. It is known as the Afikomen. The Afikomen is found and brought out again. Just like His body was hidden away in the tomb for three days to be risen, brought out again and made manifest to His followers.
He took the wine and said, "This is my blood". The wine is symbolic of the blood used as an atonement of sin. His blood was shed for us on Calvary.
The entire Passover Seder is a picture of Jesus the Messiah.
On Calvary, the hyssop with the wine that was lifted up to Him was symbolic of the blood of the Passover Lamb being lifted up to our own Passover Lamb.
It is finished. His work as the atonement for our sins is completed and the work of redemption is once and for all finished. Sin is defeated.

“And when Jesus had cried out with a loud voice, He said, “Father, into Your hands I commit My spirit.’” Having said this, He breathed His last."
